Sweet Christmas recipes: Glucovibes King’s cake

Glucovibes Donut

Christmas version of donuts and your King’s Cake filled with good vibes.
Ingredients (14-16 units):
- 300 grams of sweet potato
- 180 grams of pitted dates
- 40 grams of extra virgin olive oil
- 40 grams of coconut oil
- 4 organic eggs
- 1 packet of baking powder (16 grams)
- 5 grams of baking soda
- 30 grams of pure cocoa powder
- Vanilla extract to taste
- 200 grams of dark chocolate (+80%) for the final coating
Preparation:
- Soak the dates in hot water for 15 minutes to hydrate them.
- Mash the peeled sweet potato.
- Add the drained dates and blend again.
- Add the remaining ingredients (excluding the dark chocolate, which will be used for the coating) and blend everything together.
- Grease the donut molds with a few drops of extra virgin olive oil and pour the batter until it covers ¾ of the mold.
- Preheat the oven to 180ºC (350ºF) and bake for 20 minutes with top and bottom heat.
- Let them cool and carefully unmold.
- Once baked, let them cool and cut them in half horizontally, so you end up with two layers.
Prepare different types of fillings:
Option 1: Cream Filling
Ingredients:
- Whipping cream
- Sweetener (such as erythritol or similar)
Preparation:
- Whip the cream and mix it with the sweetener.
- Fill the base of the donut and cover with the other half.
- Once the donuts are filled, place them in the freezer for a couple of hours.
Option 2: Homemade Nutella. You’ll be amazed!
Ingredients:
- 100 grams of ripe avocado
- 100 grams of pitted, hydrated dates (or you can use a sweetener to replace the dates)
- 100 grams of coconut milk or plant-based milk
- 40 grams of 100% pure cocoa powder (unsweetened)
Preparation:
- Blend everything together using a blender. Remember to hydrate the dates in hot water for 15 minutes to make them easier to blend and to ensure the mixture integrates perfectly.
- Once you have filled the donuts, place them in the freezer for a couple of hours.
- Chocolate Coating: Melt the chocolate for the coating using a double boiler, and pour the melted chocolate over the chilled filled donut. If you want to add any toppings, such as sliced almonds or chopped pistachios, do so while the melted chocolate is still warm on the donut.
