Sweet Christmas recipes: Glucovibes nougat

Glucovibes almond and pistachio nougat
Nougat is one of the Christmas desserts that must be on the table. Here, we propose this magnificent recipe to delight your taste buds.

Ingredients:
- 25g raw almonds
- 25g roasted or natural pistachios
- 200g ground almonds (you can chop warm toasted almonds for a better texture and less gritty consistency)
- 120g pitted dates
- 30g coconut oil
- 145g Skyr (You can use natural or Greek yogurt instead, but Skyr adds protein to the nougat)
- 55g 82% or higher chocolate (about 8 ounces)
Preparation:
- If you choose to use ground almonds, skip this step: toast the almonds for about 12 minutes at 180ºC (350ºF) on parchment paper.Soak the dates in hot water for 10 to 15 minutes.
- Chop or grind the 25 grams of almonds and 25 grams of pistachios. We want small pieces of nuts, not flour, which will provide the crunchiness to our nougat. You can also use a knife to chop them to better control the size and texture of the crunch.
- Mix the ground almonds with the drained dates, liquid coconut oil, and Skyr, and blend everything in a food processor.
- Combine the chopped nuts (almonds and pistachios) with the mixture and mix well. You can use a spatula or your hands for this.
- Line a rectangular mold with parchment paper.
- Transfer the mixture to the mold and press down firmly to achieve the nougat texture.
- Ideally, place the mixture in the freezer for about 10 minutes while you prepare the next step.
- Melt the chocolate in the microwave (30-second intervals, stirring between each, to prevent burning) or using a double boiler. Once melted, pour it over the cold nougat mixture and spread the chocolate evenly across the surface.
- When the chocolate is cold, cover it with plastic wrap and place it in the refrigerator with a weight on top for 1 day or at least overnight if preparing it in the afternoon.
- Remove it 10 minutes before serving to enhance the flavors.
